Minatamis na Langka for Halo-Halo and Turon

MANILA, Philippines — When you’ve got fresh Langka (jackfruit) at your disposal, the best thing to do with it is to eat it as is. Enjoy the freshness, have your fill. But when it is Langka season and the harvest is good, you would always have plenty to spare. So what do you do with it?
“Cook it into Minatamis na Langka,” suggested Chef Jayme Natividad of Taal Vista Hotel in Tagaytay.
He added: “We have a tree that gives us a lot of fruit when it’s Langka season. Some we cook and use for our buffet, but most of the Langka harvest we make into Minatamis na Langka and use for our Halo-Halo and Turon. We usually cook large batches of Minatamis na Langka for these purposes.”
Chef Jayme shows how basic and easy it is to make Minatamis na Langka.
Minatamis na Langka
Ingredients:
1 kg. Langka (jackfruit) meat, seeds removed
2 cups water
2 cups sugar
1/2 tsp. salt (optional)
Procedure:
1. Wash Langka meat after extracting it from the sliced giant fruit and removing the seeds.
2. In a small pot, combine water and sugar and melt over low to medium heat. Let it come to a boil, adding more water if needed to fully submerge the Langka meat in the water.
3. Drop in the Langka and cook for about 7 to 10 minutes or until syrup has thickened.
4. Turn off heat and set aside to cool.
5. Once cooled, the sweetened Langka may be stored in clean jars or food containers, cover and seal, and use as an important ingredient for Halo-Halo or Ginataang Bilo-bilo. The Minatamis na Langka will keep up to one week.
