Chef Jackie Ang Po's Hearty Chicken Stew recipe
MANILA, Philippines — Stews are among the most common comfort food for Filipinos who love saucy dishes. There’s nothing like hot, steaming rice with the warm, thick tomato-based sauce of a delicious chicken stew to get the appetite going.
Chef Jackie Ang Po made classic chicken stew but added a twist to it with generous slices of flavorful chorizo.
Best known as a pastry chef, with her own Fleur De Lys Patisserie along Tomas Morato St., Quezon City, Chef Jackie is also a great culinary chef.
She shares the recipe that her husband Mitch Po and their kids, Kylie and Joaquin, personally love — Chicken and Chorizo Stew.
Chicken and Chorizo Stew
INGREDIENTS:
6 pcs. chicken legs
Salt and pepper to taste
3 cloves garlic, minced
1 pc. onion, chopped
1 pc. chorizo, sliced diagonally
1/3 cup button mushrooms, quartered
2 tbsps. Del Monte Tomato Paste
1 tsp. thyme
1/2 cup white wine
1-1/2 cups chicken broth
1 tbsp. lemon juice
2 tbsps. butter
PROCEDURE:
1. Rub the chicken with salt and pepper. Brown the chicken in the pan with a little olive oil, turning over to brown the other side. Remove and set aside.
2. Sauté the garlic in the same pan. Add the onion and sauté until translucent.
3. Add the chorizo slices.
4. Add the button mushrooms. Cook for a few minutes.
5. Add the tomato paste and season with thyme.
6. Deglaze with white wine.
