MANILA, Philippines – If you’ve got kids who go to school and bring baon with them for recess, you are, like other busy homemakers, always on the lookout for new recipes to try.

If sandwiches are what you are looking for because your kids love bread, then this Tuna Melt Sandwich with Cucumber Carrot Salad recipe by the highly respected mother-and-son team of Chefs Sylvia Reynoso Gala and Ernest Gala just might be a valuable addition to your cherished recipes. It is fully satisfying as it is delicious, and yet it is also light and healthy.

Start practicing to make some of these sandwiches, so you can send your kids to school with an ideal baon, which you can also whip up for yourself. 

Tuna Melt Sandwich with Cucumber Carrot Salad

Ingredients:

For the tuna melt:

1 can (184 grams) tuna chunks, drained

1/4 cup celery stalk, minced

1 tbsp. onion, minced

Salt to taste

1/4 tsp. pepper

3/4 cup Magnolia Salad Dressing

2 bars (185 grams each) cheese, sliced into 6 pieces (for a total of 12)

1 loaf French Baker Rye bread or Multi-grain loaf bread (12 slices)

1/3 cup cold salted butter, cut into 6 pieces

For the salad:

1 cup carrot, peeled and shredded

1 cup cucumber, peeled and shredded

1/4 cup raisins

1/2 cup yogurt

Pinch of salt and pepper

Procedure:

1. Prepare the salad. In a bowl, combine all ingredients for the salad and toss. Cover with plastic wrap and refrigerate until ready to serve.

2. Prepare the Tuna Melt. In a bowl, mix together tuna, celery, onion, salt, pepper and salad dressing.

3. Portion tuna mixture onto six 6 slices of bread. Top each with 2 slices of cheese. Cover with another slice of bread to make a sandwich.

4. In a 6- or 8-inch non-stick pan set over medium heat, put a slice of butter. Carefully slide in a sandwich, slightly brown it on one side, and then flip the sandwich to brown the other side. Repeat procedure until all six sandwiches are done.

5. Slice each sandwich into 2 to make 2 triangles. Transfer sandwiches onto a serving platter. Serve with salad on the side.
