MANILA, Philippines - Tiramisu is an Italian word that means “pick me up.” This elegant cake consists of layers of delicious components that build up to a well-balanced confluence of flavors and textures — seductive and satisfying. The good news is, creating a frozen version of this iconic dessert is now just a piece of cake — with a little help from Glad wraps and bags.

The cake recipe, courtesy of Eugene Raymundo, chef, food stylist and part-owner of Five Cows Restaurant and Kitch Café, is an easy-to-make Tiramisu using Glad aluminum foil. Line the loaf pan with Glad aluminum foil so it’s easier to de-pan. When freezing, you can also cover it with Glad aluminum foil to avoid cross contamination inside the freezer. Glad aluminum foil also locks in food flavors and acts like a pressure cooker when baking dishes inside the oven. 

Frozen Tiramisu

Ingredients:

1 bar cream cheese

1 cup whipping cream

3 tbsps. sugar

1 tsp. gelatin, dissolved in 3 tbsps. hot water

1 pack ladyfingers

3 tbsps. instant coffee and 2 tbsps. cocoa powder dissolved in ½ cup hot water

1/2 cup corn syrup

1/4 cup brandy

1 tsp. Cointreau or triple sec (optional)

Procedure:

1.Mix cream cheese, whipping cream and sugar in a mixer under low speed until mixture becomes fluffy. Once mixture becomes smooth, add in gelatin dissolved in hot water.

2. Line a two-quart metal loaf pan with Glad aluminum foil, leaving an overhang for easier de-panning. Mix coffee and cocoa dissolved in hot water, corn syrup, brandy and Cointreau.

3. Dip ladyfingers into coffee and cocoa mixture then line bottom of the pan with ladyfingers. Put at least half cup of cream cheese mixture after every layer of lady fingers. Cover with Glad aluminum foil to prevent cross contamination inside freezer and freeze overnight.

4. Unmold dessert, using ends of Glad aluminum foil to remove it from pan; peel away foil. Slice loaf and sprinkle with cocoa powder then serve.

Serve tiramisu at the end of a meal or enjoy it with family and friends; bring it to a potluck yuletide party or launch a home-based cake business this Christmas. Who knows, you can even have a truly wonderful holiday adventure this year whipping up your own version of your favorite confections, and the frozen tiramisu recipe from Glad and chef Eugene would be a divine way to start.
