Burger Burger Burger!

I've always maintained that the best of anything is made at home. Whether it be traditional cooking or someting more contemporary there is just thwte unique taste that you just can't get anywhere. I've been sweating buckets in front of the proverbial flame thinkfing about the menu for the upcoming company dinner. Ive decided to go the direction of a traditional  grilling party. With burgers and fries on my mind i set out in search of the perfect beef.

Throughout years of experience ive formulated and created my own recipe of tasty burgers    without sacrificing the tastiness of the beef. A wise old sage chef once told me that the beef should speak for itself. Like a fine cut of steak, it shouldn’t come with gravy because it should be swimming in its own, enjoying the full body of flavor, I wanted this on my burger.

One Saturday, I trooped off to our local butcher to get a better working knowledge of the different cuts and what they are used with. A balance of 80%-20% is what I was aiming for because I wanted the marbling to just barely seep out of the surface and to avoid the crumbling of the burger. I planned to sear the burgers as well to lock in the juices. I was a man with a plan.

I really cannot divulge the cuts of beef I used because it will become my family secret, but you can try experimenting with different cuts. A combination of Round and Rump may also be used. I ended up with firm juicy burgers a pound each. They were firm and crispy outside, but really juicy, with literally the juices running at the sides of your mouth juicy, on the inside. I was happy. Adding some lettuce and onions and mustard and I was in heaven. It took just 6 mins on each side to cook over a hot griddle.

There have been age old debates between pan-frying and grilling but each brings to it a different taste. You can try both and see what you prefer.

Ive always thought that the secret to a good burger was the seasonings one puts in with the beef. I never really thought about the actual beef itself. So how about you dear readers? Where should I get my cuts of meat? The local grocery stores are definitely out of the question.
