Imagine going on a great culinary journey that takes one back to the 16th century, beginning with the grand inaugural banquet of the first Philippine Republic in Malolos, and culminating with an elaborate feast similar to the grand celebrations of the ilustrados in the 19th century. To celebrate Filipino Heritage Month, Mandarin Oriental, Manila, together with historians Dez Bautista and author Mila Enriquez, held a unique weeklong food festival at the Captains Bar which traced the various regional traditions and colonial influences that create the rich tapestry that is the Filipino cuisine. As always, Mandarins hardworking general manager Helmut Gaisberger and his super efficient team outdid themselves with this timeless tribute that not only titillated taste buds but also whet ones appetite literally for a taste of history!
