Gaudi stays true to the Spanish heritage

MANILA, Philippines - Contemporary Spanish cuisine may have diverted from the traditional, with the assortment of flavors and ingredients added to new concoctions served in many restaurants these days. So if it’s the authenticity and simplicity in Spanish food that you’re looking for, Gaudi may be the perfect place to be as it stays true to the Spanish culinary heritage.

For years, Gaudi in Serendra has made a great representation of Spain’s culinary landscape. It has been the realm of real tapas and paellas, and it’s made a name for its authentic Basque cuisine — from its signature tapas such as Surtido de 8 Pintxos Frios, to its tasty and freshly cooked seafood specialties like Bacalao ala Vizcaina. Gaudi also offers a wide array of dishes that gives diners a hearty Spanish feast, thanks to the culinary alchemy of its master chef Alexandra Cacho.

To make this season jollier, chef Xandra has crafted new recipes for the Christmas season. Gaudi has delectable dishes, from appetizers to desserts, that perfectly match holiday cravings.

For starters, Gaudi offers algo para picar or something to share, with its Surtido de Pintxos, frios y calientes, or its sampler of cold and hot tapas. The flavorful Tortilla Abierta de Chorizo, an open-faced tortilla with morsels of chorizo and diced potatoes, is also a good way to kick off the meal. Those who crave seafood can also try Gambas Mikel, shrimps coated with squid-ink batter with aioli dip.

Vegetarians can select from scrumptious salads and chef Xandra’s specially created Gaudi’s Gazpacho de Sandia, or cold tomato and watermelon soup with fresh cheese and mint. The Tartar de Tomate, or tomato salad tower, is also a must-try — the freshness and rich flavor of the tomatoes plus caramelized walnuts and goat cheese give it a perfect blend.

For more seafood choices, Gaudi has fresh picks from the sea with its Criaturas Marinas, or sea creatures. The bacalao al ajo arriero or cod with garlic, tomatoes and pimientos, and lomo de mero a la plancha or grilled sea bass with vegetables are also something to delight the palate.

Gaudi’s Pecados de la Carne dishes are truly an indulgence for meat lovers. Pollo Pedro Ximenez, or chicken soaked in Pedro Ximenez sherry sauce, is tastefully satisfying. The rich flavor of the chicken is so strong it will have one finish it to the bones.

A beautifully braised oxtail simmered in wine sauce, or the Rabo de Toro, is also an irresistible choice for those with carnivorous cravings. The tenderness of the meat and the tangy wine sauce go perfectly well in the mouth.

Gaudi’s version of surf and turf, Mar y Montaña, is for the win. Tasty grilled prawns are paired with succulent aged rib eye, layers of savory baked potatoes and vegetables that are guaranteed to satiate a big appetite.

To cap off that fully satisfying meal, Gaudi also lets diners experience a sweet indulgence with its Chocolate X — Belgian chocolate ganache drizzled with extra-virgin olive oil and sprinkled with sea salt.

If diners still can’t decide which among these delightful dishes to have, they can also opt for Gaudi’s house specialties such as the Chuleton Villagodio — grilled Angus Beef prime rib, which is cooked according to the diners’ own preference.

Pariliada de Carnes is also a good choice for those with an insatiable appetite. It is an assortment savory meats — grilled lamb, beef and pork — served with alioli potatoes.

Diners may also enjoy unlimited wine as they enjoy complimentary tapas at Gaudi every Friday from 6 p.m. to 9 p.m.
