Beat 4 to 5 eggs and stir in the sautéed ingredients. Heat the remaining butter in a 9-inch omelet pan over medium heat. When the butter begins to brown, add the egg mixture. Stir the eggs briskly using the flat side of a fork and continue stirring until the mixture is as thick as scrambled eggs.
Put a heatproof plate on top of the skillet and turn the omelet onto the plate. Slide the omelet back into the skillet to brown the other side.
Serve hot or cold, cut in half or into wedges. Serve with a salad for a light lunch or supper.
