MANILA, Philippines – Do you still have lots of Indian mangoes up the tree in your backyard even though the rainy season has already been declared officially open?

It’s time to fully utilize summer’s bounty and make small batches of Burong Mangga sidings to go with your main meal instead of just letting those ripe golden fruits fall from the tree break into a mess.

Here is one suggestion given by retired TV News Cameraman Erick Aguilar, who now runs an integrated community garden called Honesty Garden in San Mateo, Rizal.

“People do not give much attention to Indian mangoes, but they make a good side fish to fried and grilled food,” said Erick, who shares his technique on making Burong Indian Mangoes to Philstar.com. 

Burong Indian Mangoes

Ingredients:

Indian mangoes

Sugar

Rock salt

Procedure:

1. Peel Indian mangoes and cut into strips.

2. Season with sugar and salt to make an interplay of sweet and salty flavors on the palate.

3. Shake together in a jar or food container with lid.

4. Chill in refrigerator to allow the sugar and salt to meld into the mangoes.

5. After an hour, you can enjoy the Indian mangoes as a side dish to fried or grilled fish and/or pork.
