Art in food at Le Monet

MANILA, Philippines –  What would complement the beautiful restaurants of Le Monet Hotel in Baguio, Luna Hotel in Vigan, Vitalis Resort and Spa in Santiago, Ilocos Sur and Hotel Rembrandt in Quezon City? 

A mouthwatering menu, of course.

This change in the three art hotels came as a wonderful accident when chef Marie Jo Camarista visited Manila and met Kristine Singson Meehan, head of the Artstream Hospitality Management Group. 

Camarista, who has Ilongga, Spanish and Japanese blood, said that she was tasked to create the menu of the four art hotels as well as train the crew on how to prepare the food and establish quality control.

“For Hotel Rembrandt, we decided on Italian and South African cuisine, while in Luna Hotel, we decided on Spanish and Mexican because that’s in Vigan. For nearby Vitalis, we thought of international cuisine while we decided on French in Le Monet because the great painter Claude Monet is French,” Camarista said.

The menu for Le Monet was an instant hit. The Le Monet tarts were fabulous, including the shiitake and chantarelle mushrooms and asparagus, four cheese and cherry tomatoes, ricotta and herbs.

Other appetizers include fried calamari, shrimp cocktail with three dips, gambas and spinach and ricotta ravioli.  

Main dishes had stuffed lamb with seasonal vegetables and twice-cooked pork knuckles with a chocolate dip.
