MANILA, Philippines – Nancy Irlanda gathers the trailblazers and thought leaders in the local culinary scene for their take on the latest global trends in food. Their consensus: “Filipino cuisine is ready for the world!” The minds behind popular restaurants such as Cibo, El Cirkulo, and Green Pastures say there has not been a brighter day for Filipino cuisine than today.  Chef Gaita Forés says, “Filipino restaurants are now the hottest tickets to get.”  Chef Robby Goco shares, “There’s a story in each ingredient that we’re serving.”  What about farm-to-fork? “We really have to support the farmers,” says chef Jay Gamboa.
