Classic Filipino & Thai cuisines now at ATC

The Philippine Star

MANILA, Philippines - A new gustatory avenue has opened in the Entertainment Complex of Alabang Town Center with the arrival of the premier eat-all-you-can, eat-all-you-want restaurant Cabalen and Thai restaurant Soi Eat Thai, Love Thai. Patrons may now enjoy all-time favorite Filipino dishes right at the heart of the bustling neighborhood of Ayala Alabang. Beside Cabalen is is Soi, where diners get to explore authentic Thai cuisine, a first in ATC.

Just like the balance of yin and yang, Cabalen and Soi create a balance of old and new fare for diners at Alabang Town Center. Since they opened a few months ago, both Soi and Cabalen have been receiving a warm welcome from the community.

Restaurateur Maritel Nievera with partners Danny and Lorraine Feliciano, and Ceres Lao celebrated the blessing of Soi and Cabalen with special guests from the Ayala-Alabang community including Insular Life executives Mayo Jose Ongsingco and Jesus Hofilena. Fr. Benny de Guzman SJ solemnized the Mass and blessing of Cabalen and Soi branches. Ateneo’s Fr. Luis Candelaria, SJ, who happens to be a fan of Cabalen’s signature pansit puti, graced the event as well. Fr. Candelaria led the prayer for the feast that followed the restaurants’ blessing.

Guests loved the Cabalen buffet, which features over 50 dishes, from appetizers to desserts. Favorite are the signature dishes kare-kare, with sauce made from freshly ground peanuts that give a rich consistency and complemented by Cabalen’s own bagoong, gatang kuhol and bringhe which are from Cabalen’s Kapampangan roots. Gatang kuhol  is  an exotic dish considered to be a local version of escargot made with coconut milk while bringhe is similar to arroz Valenciana made with sticky rice and coconut milk.

Guests also enjoyed authentic Thai dishes from Soi. The pad Thai, a dish balancing sweet, tangy and spicy sauce mixed with fresh Thai rice noodles. Savory soups Sukhothai  and Tom Yum Talei were also served as a warm treat on that rainy morning.
