MANILA, Philippines - Who is the American celebrity chef best known for combining his love of cooking with his love of gardening in his The Herbfarm Restaurant where he is known for his multi course menus?

He grew up in Maryland and by the age of 12, was tending vegetables as well as turning out puff pastry.  After college in the Northwest, he moved to San Francisco and attended the California Culinary Academy, graduating in 1983.

Following several kitchen stints in San Francisco, including the venerable Ernie’s and the opening year of Stars, he moved back to Seattle where he became executive chef of the Alexis Hotel.

In 1990, Ron Zimmerman and Carrie Van Dyck tapped him to take over as the chef of a tiny restaurant serving luncheons in a converted garage on the grounds of a working herb nursery.  The restaurant was called The Herbfarm.

An expert on culinary herbs, he has been featured in several prestigious newspapers and magazines like the New York Times, Bon Apetit, Gourmet, and Fortune.  He has also appeared on televisions shows like Martha Stewart Living, Better Homes and Gardens Television, and The Food Network.

Nancy Leson of The Seattle Times has named him “an incomparable chef genius” in a four star review and the Herbfarm Restaurant was ranked number 15 in the 50 best restaurants in the US by Gourmet Magazine in 2001.

The following year, USA Today’s Jerry Shriver named his dinner at The Herbfarm was his top meal for 2002.  It is the only restaurant in the Northwest to be awarded five diamonds by the AAA.

He is the recipient of the 2000 James Beard Award for the Best

Chef, Northwest/Hawaii and is the author of The Herbfarn Cookbook: 200 Herb Inspired Recipes Plus a Complete Guide to Growing, Handling, and Cooking Fresh Herbs, which won the International Association of Cooking Professionals Award for the Best Cookbook in the Chef Restaurant Category.  He is currently working on a book on herbal recipes.

He opened a second restaurant Poppy in late 2008.  Named after his mother, Poppy, the restaurant’s food is inspired by herbs, and delves deeply into spices. To present his own style of cooking, he designed Poppy’s menu by borrowing the idea of an Indian thali.  The small plates on the thali highlight seasonable ingredients, fresh herbs, and spices.
