The 18th century English writer Sydney Smith once defined heaven as “eating…foie gras to the sound of trumpets.” But surely for the gourmet, foie gras would just be as heavenly without the regal blare of trumpets. And though Smith uttered those famous words in the 1700s, he certainly was not the first to be enamored of foie gras. Indeed, man’s infatuation with it dates back to antiquity — from the ancient Egyptians, to the Romans, to the present.

Today, foie gras is produced in several countries, but none more passionately so than they do in France, especially in the Périgord region where the best foie gras comes from. Production peaks in the cold winter months, giving rise to the tradition of serving this rich delicacy on Christmas and New Year celebrations.

Here in Manila, Le Canard d’Or’s chef-proprietor Farah Tolentino-Ylagan relives French holiday tradition by making exquisitely prepared foie gras. And for her clients for the past five years, it has become their own tradition as well. 

Farah uses an age-old recipe she learned while living in France. She selects the best grade “A” duck livers from Périgord, seasons them with a selection of fine spices, and cooks them with the gentlest of heat. The result is opulence in texture and flavor one rarely experiences in food.   On offer are two types of foie gras — one mi-cuit en terrine and the other, marinated and poached in red wine. They come in hand-painted wood boxes with a rope handle.   Melba toasts are included and an option for a bottle of wine paired by a sommelier is available. 

Those looking beyond foie gras may opt for escargots à la Bourguignonne, which Farah also expertly prepares — premium French snails cooked with French butter from Normandy and fresh herbs. The escargots are packed, ready to be baked in a hot oven. Options include a custom wicker case with escargot plates, tongs for holding the shells, and forks. Live the French tradition this holiday season.
