For Dagupeños, grilling is considered the best method of bringing out the fish meat’s flavor. In fact, a public grilling activity is one of the most anticipated highlights of the annual bangus festival, where both locals and tourists alike converge in the streets and participate in the merriment of cooking bangus and turning them over hot coals.

These grill experts also know first-hand that one of the undesirable experiences of grilling is the mess and hassle of delicate fish skin sticking to the grill. Some resort to wrapping the fish in ordinary aluminum foil, but the skin is still prone to sticking to the foil’s surface.
