For starters there is beef tenderloin tartare salad made of fragrantly-marinated minced tenderloin accompanied by mixed greens, asparagus and a crispy dumpling, drizzled with an 1837 Green Tea infused dressing. Choose among the main courses: Cheese-crusted salmon, pan-seared salmon crusted with cheese and Matcha green tea with cucumber ribbons, alfalfa sprout, carrots, arugula sprigs, cherry tomatoes, mustard mousse and fresh dill served with Lemon Bush Tea infused vinaigrette; Lemon baked cod, roasted cod fillet accompanied by artichoke and potato puree, potato strings, Roma tomatoes and capsicums, drizzled with a Silver Moon Tea infused cream sauce; or the poulet en crevettes, herb-marinated chicken thigh accompanied by shrimp, egg, button mushrooms, capsicums, shallots, a homemade scone and served with a Cognac cream sauce infused with Rum Tea.
