The Bailliage de Manille of the exclusive Chaine des Rotisseurs, dahlings, held its 46th Intronisation and Grand Gastronomic Diner Amical recently with the theme “The Days of Wine and Roses” at Makati Shangri-La.
The hotel transformed the gallery outside the function rooms into a dining space that held two elegantly adorned long tables, each seating 41 guests in the manner of royal banquets in the time of King Arthur. No less impressive, dahlings, was the table arrangement of at least a thousand long-stemmed red roses held in tall vases arranged at intervals along the tables — absolutely awesome!
The Italian-themed dinner was a culinary obra maestra, created with loving care by the hotel’s executive chef Nicola Canuti, an Italian. The impeccable dishes were paired with meticulously selected French and Italian wines in honor of the Chaine’s French origins and the Italian-themed dinner. Of particular note, and much appreciated by many of the chi-chi guests, were Fonterutoli Chianti Classico 2015, which was paired with the beef tagliata, and the Luccarelli Il Bacca Old Vines Primitivo di Manduria 2015, which went with the cheese. Guests also loved the pairing of the Lhuillier Champagne Brut Rose with the octopus, prawn and oscietra caviar, as well as the lobster consommé, squid, black cod and saffron potatoes. For the digestif, guests had a choice of Amaretto di Saronno or Knob Creek Bourbon.
Entertainment came by way of songs and a short dance number featuring American standards from the ‘20s and ‘30s that harked back to the time of the Prohibitions, when speakeasies offered bootleg liquor to help people drown their sorrows and relax. At the conclusion of the superb dinner, palanggas, the kitchen brigade and service staff were called in for the “curtain call,” well-deserved applause for an excellent dinner that the palate will long remember, served in the impeccable manner that Shangri-La is known for. Bravo! Bailli de Manille president Fred Borromeo for a memorable evening of excellent wine and tons of roses.
