Clark n’ roll, the Hard Rock Café way

Clark n’ roll, the Hard Rock Café way
Come together, right now: Hard Rock Café in Clark rolls with a crew that lives and breathes the groove of “Love All, Serve All.” It’s not just a motto; it’s a full-throttle philosophy.

I walked into the men’s room as the frontman of one of the bands for the night, Pyromania, blasted Guns N’ Roses’ Nightrain from his mobile phone at modest mayhem levels. He was like a prizefighter in the dressing room, psyching himself before getting in the ring. I was sure once I stepped out, the man would let out a guttural bellow like Axl Rose strapped in a chair of a city’s gas chamber. That was the vibe at the launch of Hard Rock Café Clark in Hann Casino Resort, Pampanga. It’s so fortunate that, with the roll of the dice, we get to indulge in the burgers (try the Messi Burger), cocktails (try the Hurricane), ever-reliable brews (try everything) and old-school rock n’ roll music, any ol’ way you choose it. All served with a side of swagger.

Right there: at the former Clark Air Base — ghosted with fighter jets and servicemen — which is now known as the Clark Freeport hub — soon to be peppered even more with restaurants, parks, hotels and casinos. This is a testament to the province’s penchant for reinvention. How coincidental since rock ‘n’ roll (in the hands of people like Zappa, Van Halen or, yes, GNR) is about the push-and-pull of invention and reinvention.

“We are glad to open the third Hard Rock Café in the Philippines, welcoming Clark to the Hard Rock family,” said Tom Perez, VP of franchise operations, Hard Rock International. “We are ready to make a positive impact on the hospitality and entertainment sector of Central Luzon by offering yet another wonder for tourists and locals to visit this part of the Philippines.”

We will rock you: Tom Perez, VP of franchise operations, Hard Rock International: “The Bistro Group has all kinds of brands — casual dining, fine dining. We’re happy with our partners. The Clark branch represents a more high-end feel to complement the casino property it’s located in, while still delivering the vibrant energy we’re known for. Hard Rock Café adapts to each location, blending its DNA with the local culture and venue to create a unique experience for every café.”

Guns N’ Roses, by the way, is Tom’s favorite band. The reunited Gunners played a concert at Seminole Hard Rock Hotel & Casino, Hollywood, Florida in 2021, but the VP was at the opening of a branch in another part of the world. “Some big names have played at Hard Rock Café — including Elton John,” he pointed out. Journey lead singer Arnel Pineda headlined the grand opening of Hard Rock Café Manila at S Maison in Conrad in 2019. I do remember him singing Rush’s Tom Sawyer. Mean, mean stride, indeed.

Perez remarked, “To tell you the truth, this is really a dream job to work for a lifestyle brand like this. Every day is different. Today I’m in Manila, tomorrow I’ll be in Kyoto.” (Like a rock star on tour, mind you, or a cowboy on a steel horse he rides.) This illustrates the appeal of Hard Rock Café: it is embraced everywhere, from Japan, Paraguay, Argentina, (and pretty soon in Mauritius and Sri Lanka), to our own neck of the woods.

And it’s sensory overload — the good kind — at the Clark branch’s 446-square-meter space. Picture this: a stage situated right above the bar, a flamboyant nod to rock ‘n’ roll’s never-look-down ethos. Pieces of memorabilia from music legends hang on the walls like holy relics. (Our booth was right next to a 1968-’69 Led Zeppelin tour jacket, weirdly placed beside Mariah Carey’s high-heeled pumps.) Comfortable seating for 125 patrons ensures you can soak it all in, whether you’re nursing a beer or banging your head to live music that echoes the spirit of a thousand garage bands — or some pop-R&B-soul variants. (Jinky Vidal, formerly of Freestyle, was the headliner during the launch.)

Forget cookie-cutter templates. Hard Rock’s Clark edition is proof that the brand is all about individuality. “Each location is different. It should feel like a Hard Rock but not look like every other one,” explained Perez. “And it’s not the first time we’ve done this (placing the stage at the top of the bar), but it works. It maximizes the space and focalizes energy where it belongs — on the music and the drinks.”

A band of Bistro executives: Chef Josh Boutwood, corporate chef; William Abuel, VP of operations; Lisa Along, chief marketing officer; Marilu Rivera, chief people officer; April Sy, VP of operations; Jean Paul Manuud, president; RC Tiongson, chief operating officer; Guia Abuel, chief operating officer; Brian Peck, Hard Rock Café director of operations; and Zoilo Caparas, VP for training.

Jean Paul Manuud, president of The Bistro Group, lauds the partnership between Bistro and Hard Rock Café. “We wanted to make sure people here in Pampanga can also enjoy the same experience that Hard Rock offers. As you can see, the interior design is different from our first and second restaurants. It feels very young, vibrant, and full of energy, with a mix of new colors and a fresh atmosphere. It’s really something unique. What I love about Hard Rock is that they don’t stick to a single standard look. Instead, they adapt the design to fit the character of the city. So, for Clark, we aimed to build a restaurant that’s not just visually stunning but also reflects the local vibe.”

And then there’s the merch. The iconic Hard Rock T-shirts aren’t just souvenirs — they’re badges of honor. “You can’t buy these online. If someone’s wearing a shirt that says Clark, Philippines, you know they’ve been here. It’s about the story behind it,” Tom explained. It’s not just fabric; it’s folklore.

No Hard Rock story is complete without memorabilia. From Prince’s purple-paisley getups to Madonna’s Cadillac, every piece is authentic and steeped in history. “Each location has unique items. It’s not like other places where you see the same thing everywhere. This is authentic,” Perez emphasized. The Clark branch, like every Hard Rock, offers its visitors a chance to connect with rock royalty in an intimate, tangible way. (You’ll be inches from strumming away at a green Kiss guitar by Kramer.)

When asked about a dream keepsake, the Hard Rock Café executive did not hesitate. “John Lennon’s glasses,” he answered. Tom Perez wants to see the world through a Beatle’s imaginative kaleidoscope eyes.
