Secrets of the Masters goes Japanese

The Philippine Star

MANILA, Philippines – Tomorrow night at 7:15, Q-11’s Secrets of the Masters will bring authentic Japanese goodness through Chef Toshi Obigane.

Armed with mastery of his craft and the richness of Japanese traditions, Chef Toshi decided to leave Japan and travel the globe to share the beauty and magnificence of Japanese food. A few years back, he decided to come to the Philippines and since then, he has made the Filipino dining experience truly unforgettable. Chef Toshi takes charge of the Japanese restaurant Senju at the Edsa Shangri-La Hotel.

His exhibition starts with Anago Nanbanzuke, an authentic Japanese cuisine of sea eel and vegetables marinated in vinegar sauce that has an exciting blend of fresh, savory and tangy flavors. Chef Toshi then follows this up with a serving of Tori Ageni which in English is simmered chicken and eggplant with soy sauce.

Equally fabulous is Gindara Yuan-Yaki or grilled black cod. Golden, crisp, and well-done outside but soft and smooth inside, the fish dish is a perfect treat for a delightful Sunday evening. To cap the day, Chef Toshi prepares fresh Tuna Tataki.
