A Journey to Sumptuous Origins

PEOPLE PLACES - Flor Ynclino - The Freeman

A Chinese Master was recently welcomed to the roster of seasoned culinary experts of Radisson Blu Cebu - Chef Aik Liang Tan.

Hailing from Johor, Bahru, Malaysia just a causeway link from neighboring country Singapore, Chef Aik Liang Tan began his culinary journey at the age of 16 as a steward in a seafood restaurant in his hometown. Chinese in ethnicity but born and raised in Malaysia he has cooked his way into different restaurants and luxury hotels in India and Singapore with a culinary experience spanning to 25 years.

Chef Tan's unique approach in the kitchen is characterized by his cooking philosophy of bringing out the indelible mark of his cultural identity into the flavors of his dishes. Well-versed with the flavors of the East, he pays homage to the many influences of his heritage by fusing the nuances of each country's rich cultural history into the taste, all melding into one diverse array at Feria.

He brings to the table an authentic spread of fiery dishes from the Orient starting off with a delectable selection of Chinese regional cuisines such as the Szechuan Kung Pao prawn, Cantonese char siew pork, Dong Po style braised pork belly and Peking duck. Also featured on the menu are the pride of Southeast Asia, Singapore's renowned national dish - the Chili Crab and the iconic curry laksa, together with the classic Malaysian chicken curry and Bak Kuh Teh soup. Along with the varied choices is the extensive dim sum spread and live noodle station.

From the fiery to the aromatic spices that make up the multitude of Asia's food scene, Chef Tan's passion for gastronomic creations is the tie that binds tradition.  His epicurean specialties are at Feria's Oriental Saturday's lunch and dinner buffet.

Chinese weddings in particular are now good to host at Radisson Blu Cebu with their signature wedding packages along with a special lauriat menu prepared by Chef  Tan himself.

Speaking of restaurants… Café Laguna recently celebrated its 24th anniversary of excellent service regarding food not only to the Cebuanos but also to some parts in Mindanao. On the day of the anniversary, Café Laguna, Laguna Garden Café, Ulli's, Lemon Grass and the other outlets offered a sumptuous buffet for a minimum price per head. It was a very successful celebration indeed. Kudos to the Urbina children who are now running the business efficiently with their Mom Lita Urbina still at the helm!  PTL Lita is now in good shape!

And still ongoing at Marco Polo's Café Marco until November 15 is the celebration of Indian Cuisine, an explosion of flavors to enjoy as Café Marco explores the rich cuisine of India. It's the feast of authentic Indian dishes like chicken tandoori, lamb shish kebab, chili pakoora and other exotic dishes!
