A Culinary Showdown

CEBU, Philippines – In-house chefs of the Cebu City Marriott Hotel put their toques and aprons in a fun and exciting kitchen showdown recently. It was a test of their skill and creativity – and their ability to think outside the box under pressure.

The hotel’s in-house restaurant Garden Café was the venue, where about 50 exclusive Club Marriott members witnessed the competition. Up for the challenge were four skilled culinarians trained under the strictest Marriott standards, who used quick wit and their sharpest blades to cut, slice, and dice as they transformed local ingredients “bisayang manok” (native chicken) and “molmol” (parrot fish) into a signature mouth-watering appetizer and a savory main dish.

The kitchen’s secret spices, seasonings and herbs were all made available along with various vegetables and other additions to complete a true gastronomic original. The element of time added a dash of pressure as the contestants were given only 30 minutes to prepare, cook and plate two courses. When the bell rang, all creations were tested at the scrutinizing taste buds of the epicurean panel, and served to a discerningly appreciative Club Marriott audience. The chefs were judged on the mise-en-place and cleanliness of their working stations, preparation and the over-all presentation and taste of their masterpieces.

Declared as this year’s Best Chef was John Ryan German. First place winner was Xyrene John Lou Duque; second place winner, Henry Hallarte; and third place winner, Ralphban Ricuplaza. They got cash prizes and gift certificates. CCMH’s Executive Chef Chachpol Suaisom prided, “I am happy to attest that our chefs in the hotel are a skilled and quality team… all eager to please and satisfy.”
