FNRI develops meatless sausage
The Food and Nutrition Research Institute of the Department of Science and Technology (FNRI-DOST) has developed a meatless sausage using soybeans that can prevent cancer and heart diseases.
A study done by the FNRI showed that bioactive chemical components of plant food such as isoflavones from soybeans can play a role in the prevention of cancer and heart diseases.
The Department of Health said heart disease is one of the 10 leading causes of deaths among Filipinos.
Based from its 2003 data, the DOH said 67, 696 Filipinos out of 100, 000 die of heart ailments.
The FNRI has produced meatless sausage that was light brown in color, juicy and tender, and flavored with sausage seasonings and herbs.
“This product contains 1.5 percent dietary fiber, 17.3 percent protein and 262 kilocalorie per 100 grams,” the FNRI said.
“A 72 gram-serving size will provide 13.4 percent of recommended energy and nutrient intakes (RENI) for energy and 33 percent of protein of children four to six years old.”
The FNRI said the product, packed in polyethylene bag, has a shelf life of one year.
“The meatless sausage was developed to help consumers reduce the risk of cardiovascular diseases, hypertension and cancer,” the FNRI said.
