A pocketful of Sunshine

MANILA, Philippines - Sunshine Kitchen restaurant has been in existence for a while but I never got the chance to visit it until my dear friend Giselle Tongi-Walters invited me over to try the new drinks of her husband Tim Walters. Both Giselle and Tim  underwent bar training and the two of them make excellent drinks. So, one time, prior to my night-out, I decided to pop up at Sunshine Kitchen.

One of the owners, Cristal Bagatsing, warmly welcomed me to the drink-tasting that was partnered with the restaurant’s delicious food. Cristal even gave me and JM Rodriguez extra food since she noticed how much we could actually eat!

Tim, who is also from BarMansMix, created six new cocktails: “A pear-fect drink” (Absolut pear vodka, organic guyabano juice and spiced cardamom); “Tea-to-tal-er” (Tanqueray gin, English Breakfast tea, cranberry and tonic); “The-sun-also-rises” (Maker’s Mark Bourbon, Earl Grey tea and muddled fresh cantaloupe); “Out-law” (Fresh watermelon with chilies with reposado Agave tequila); “De-lux” (Hennessy Cognac and Pimm’s No. 1 with tropical fruits); and “Cup full of Sun-shine” (Don Papa rum, house-infused ginger casis, dry Noilly Prat and tropical fruits).

I enjoyed almost all the cocktails (as I am not fond of guyabano, which is soursop for my foreign readers) and drank at least two of each. I made sure not to drive that night (I rode with friends) so I could afford to drink away.

Sunshine Kitchen was a nice discovery for me, both for the food and Tim’s cocktails. I can’t wait to try them once more!
