CCA’s BS in culinary mgmt sharpens chef’s skills

MANILA, Philippines - As the pioneer school in professional culinary education in the Philippines, the Center for Culinary Arts (CCA, Manila) has long produced graduates who are not only competent in the kitchen but also proficient in business and food management.

 When the school was established in 1986, the expectations for culinary students were limited to the confines of a kitchen in hotels and restaurants. Times have, however, changed. “Culinary arts today is not only relegated to hotel and restaurant  kitchens,” says Dr. Ma. Veritas Luna, chancellor for education of CCA, Manila. “The culinary field now extends to food media, food manufacturing, health and wellness, sustainability and food tourism. CCA, Manila  provides opportunities to students to pursue these different careers.”

CCA’s Diploma in Culinary Arts and Technology Management has produced many successful chefs who now work in and for the food industry. The two-year program gives students a strong foundation in order to become disciplined culinary professionals through sessions that deal with practical kitchen training supplemented with a comprehensive foodservice management training program. The program, says Dr. Luna, is recommended for those who wish to pursue a career as a chef.

CCA, Manila also prides itself with its successful affiliations with international educational institutions. In their elective learning exchange program, students are given the opportunity to travel and learn in countries like Canada, USA, New Zealand, Australia, Thailand and Korea. “This program allows students to have a better understanding of the diversity of unique culinary cultures and application to business enterprises,” says Dr. Luna.
