MANILA, Philippines - In celebration of Taal Vista Hotel’s 75th anniversary, celebrity guest chefs will be taking over the kitchen to present their unique interpretations of Filipino Cuisine. Experience the artistry and flavor of their dishes at “Gems: A Festival of Filipino Flavors Buffet”on select weekends until November 23. Café Veranda’s lunch and dinner buffets.
Chef Sau del Rosario featured this and next weekend. Chef Sau, a proud Pampangeño, will pay tribute to his roots with heirloom recipes from his mother’s kitchen. Notable appetizers include maya-maya mayonessa, Donya Editha’s chicken galantine, kesong puti stuffed kalabasa florets and fried catfish and buro pockets with mustasa and pako salad.
The main course offerings will showcase his European training as he blends local ingredients with old world techniques to create inspired dishes such as fried ox tail ravioli with macadamia kare-kare truffle sauce and braised ox tongue with mushrooms and corn. Balancing the savory flavors of the main course will be the dessert offerings which include jackfruit tibok-tibok, suman sa lihiya with mango and coco jam and pandan crepes with sweetened coconut.
