Chicken Fingers And Pesto Mayo

Ingredients:

240 g chicken breast fillet (sliced)

salt and pepper to taste

200 g all-purpose flour

3 whole eggs

500 g Japanese breadcrumbs

250 ml olive oil

Procedure:

In a medium bowl combine mayonnaise, olive oil, parsley, basil, lemon, salt and pepper. Mix all together well with wire whip, put in a container and refrigerate. Preheat pan with oil for five minutes. Marinate sliced chicken breast with salt and pepper. And cover with all-purpose flour, coated with beaten egg and breadcrumbs. Carefully deep-fry the chicken piece-by-piece until golden brown, approximately for two minutes. Drain excess oil and pat with paper towel. Serve with honey mustard sauce on the side.

Ingredients:

200 ml mayonnaise

60 ml pure Olive oil

15 g chopped parsley

15 g chopped fresh basil

30 ml lemon juice

salt and pepper to taste
