A Fab French Toast Breakfast in Bed

CEBU, Philippines - Every last week of September, we celebrate the National Family Week by virtue of a Presidential Proclamation with focus mostly on the role of parents in strengthening the Filipino family. For a change, why not pay tribute to your parents to thank them for all the wonderful things they’ve done for the family? Surprise them with this delicious breakfast tribute.

Prepare the following ingredients:

2 eggs

1 cup milk

A pinch of salt

1 Tbsp sugar

1 tsp each of vanilla extract and ground cinnamon

Butter or canola oil for frying

8 slices French Bread (or 16 of baguette) or any bread of your choice (regular loaf bread)

In-a-hurry version:

1. Get a pie plate or a shallow, flat-bottomed dish or container big enough for one slice of bread. Mix all ingredients in the container except for the bread.

2. Over medium-low flame, heat butter or oil in a skillet or on a griddle.

3. One at a time, dip both sides of the bread in the egg mixture. Place on skillet or griddle.

4. In batches, cook until golden brown, turning once. Repeat until all the slices of bread are cooked.

Make-ahead version:

In a bowl, mix all ingredients except the bread. Pour half of the mixture into the bottom of one or more baking dishes large enough to hold the bread in a single layer. Add the bread and pour over with the other half of the egg mixture. Make sure the bread is coated everywhere. Cover the dish and refrigerate three hours or overnight.

When you’re ready to cook.

1.Over medium-low flame, heat butter or oil in a skillet or on a griddle.

2.One at a time, transfer the saturated slices to the skillet or griddle.

3.In batches, cook until golden brown, turning once. Repeat until all the slices of bread are cooked.

Serving instructions for both versions: Serve with butter, warmed syrup or fresh fruit, fruit preserves or simply sprinkle with powdered sugar. (Source: The Church of Jesus Christ of Latter-day Saints Family Calendar 2011)
