CEBU, Philippines - To usher in the Year of the Tiger, guests are invited to enjoy the prosperity menus of Shangri-La’s Mactan Resort and Spa, Cebu’s Chinese Executive Chef Kwan. The prosperity menus are available in Tea of Spring for lunch and dinner from February 13 to 19, 2010 for only P1,888++ per person for a minimum party of four.

Chinese New Year marks the beginning of the lunar year and is the most important of all Chinese celebrations. Also known as the Spring Festival, Chinese New Year is a traditional time for feasting with family and friends that dates back thousands of years. Like all Chinese celebrations, food plays an important role in this occasion. At Tea of Spring, this year’s eight-course prosperity menus are a rich mix of well-loved festival dishes and Chef Kwan’s Chinese specialties.

The prosperity set menus include time-honored dishes such as Yee Sang, a raw fish salad made of marinated salmon and shredded vegetables traditionally served only on Chinese New Year. During Chinese celebrations, the family table is commonly laden with a whole fish as it is believed to symbolize togetherness. However, the Chinese deem that it is best not to finish the entire fish as the excess heralds an abundance of wealth and prosperity for the coming year. Chef Kwan serves a Steamed Whole Grouper in Light Soya Sauce to fulfill this essential part of the dining tradition. Stir-fried Vegetables with Dried Scallops represent family harmony while a dessert of Chinese New Year Pudding symbolizes close-knit relations for the whole family. Chef Kwan’s signature dishes including Bi Feng Tang Roasted Crispy Chicken with Toasted Almonds and Garlic and Roasted Chicken, Cantonese Style are also part of the menu to add authenticity to the celebration.
