I was invited by Shangri-La’s Mactan Resort & Spa in the persons of director of communications Mildred Amon and assistant communications manager Rica Renee Rellon to meet executive Chinese chef Kuan Yiu Kan.
Chef Kuan brings 35 years of experience in food working with world-famous Chinese restaurants in various countries in Asia and South America. Chef Kuan takes pride presenting his new menu at the Tea of Spring.
Favorite dishes include Shanghainese spinach broth with freshly made dumpling and main courses: braised eggplant, seabass with bean curd, sweet and sour pork with pineapple fried rice with dried scallops and crabmeat; dessert – mango sago with chilled red bean cake; and appetizer Kamlum salted duck with bean curd.
