Cafe Marco’s Cebuano Cuisine

A fornight ago, Marco Polo Plaza's Cafe Marco featured the all-Cebuano Cuisine with Ms. Jessica R. Avila, foremost authority in Cebuano food, as their Guest Chef.

Known as the doyenne of Cebuano Cuisine, Jeh as she is fondly called by friends and relations, served all the popular dishes at her erstwhile restaurant Chikaan.

Superbly prepared and tastefully served were Cebuano all-time favorites: Kinilaw nga Tangigue, Chicharon Carcar, Kinusit-kusit nga Bulad Nokos, Embotido, Piniritong Pisô, Sunlutan for Abregana; Ensalada – Lato, Lokot, Guso, Manggang hilaw with Itlog Maalat, Puso sa Saging, Gabe nga naay Bolinao; Sabaw (Soup) – Linat-ang Manok Bisaya and Utan Bisaya; Mga Sud-an – Adobong Baboy, Calderetang Kanding, Tinaosihan nga Lapulapu, Adobong Nokos, Balbacua, Ampalaya nga may Carne, Relyenong Talong, Relyenong Lambay, Mais Kan-on, Pusô, Sinangag nga Mais may Ata; Wok – Pancit Guisado, Bam-i; Sera Gana (desserts) – Masi, Kolo, Binignit, Torta, Budbud Kabog, Leche Flan, Bibingka Mandaue, Buko Pandan, Pintos, Otap, Rosquilos, Caycay, Tagaktak, Masareal ug uban pa.

But before the food tasting, the exhibit of the various images of the Santo Niño was opened with guest of honor Dawnie Roa, DOT Region 7 Director, cutting the ribbon assisted by Marco Polo Plaza GM Hans Hauri and Msgr. Carlito Pono. In attendance were Val Sandiego, collector of Sto. Niño icons, and the Los Compañeros de Juego del Santo Niño who so kindly displayed their rare antique pieces at the hotel lobby. Fr. Rolando Manayon then sprinkled holy water at the exhibit and a portion of the lobby.

Entertainment was by Val Sandiego's dance troupe with his wife Boging dancing as soloist. The exhibit lasted after the feast of the Holy Child.

Julia Fordham will dish out love songs for this love month of February and will surely titillate her audience with her hit songs especially the new songs taken from her latest album “China Blue.”
