Food technologists develop more bangus products

More value-added products can now be turned out of full-grown milkfish These include bangus longganisa, nuggets, stuffed-grill burger, and stuffed milkfish or relleno

Standard production processes, storage studies, and appropriate packaging materials have been established for these products by food technologists of the UP-Visayas-institute of Fish Processing Technology (UPV-IFPT) in Miag-ao, Iloilo. (UP Visayas’ main campus is in Miag-ao; its other campuses are in Iloilo City, Cebu City and Tacloban City)

"We are seeking commercial partners to take these products to the market," announced PCIERD, which supported the project

The longganisa, nuggets, stuffed-grill burger, and relleno are acceptable to all age groups and to non-pork eating consumers, PCIERD pointed out

"As an export item, these products make Filipinos long for home and crave for the Christmas and fiesta seasons. The stuffed milkfish is the best product for promoting the unique Filipino hospitality as it symbolizes the care, patience, and artistry of Filipino cooks," it said

Bangus longganisa is good for breakfast, lunch, and snack

Bangus nuggets are made from high-quality milkfish flesh and a prime quality product for parties, fast food centers, and restaurants. The natural fiber and flavor of the meat are retained. It is a health food, rich in protein and low in cholesterol

The bangus stuffed-grill burger is a new high-end product from minced flesh of back and tail and filled with Filipino favorite flavors

Relleno is a fiesta fare for Filipinos here and abroad. – RAF
