Pen brings back poolside barbecue buffet

It’s back! The Peninsula Manila brings back its popular cool weather special, Hot Off The Grill Poolside Barbecue Buffet, until February 2009, every Friday and Saturday night, from 6:30 to 10 p.m.

It’s holiday al fresco dining at its very best — and a healthy alternative to calorie-laden holiday eating. Succulent meat, fresh seafood and Peninsula homemade sausages served hot and fresh off the grill with a selection of salads, corn on the cob, baked potatoes, sauces and gravies, breads and desserts by the poolside.

The choice items on offer at the poolside buffet are herb- and garlic-marinated lamb chops, citrus- and pepper-marinated tuna and vegetable skewer, teriyaki-marinated beef mignon, tandoori-marinated lapu-lapu, wood-smoked pork spare ribs, Cajun-spiced beef burger, lime-marinated king prawns and lobster tails, garlic- and soy-marinated chicken legs, and a variety of Peninsula sausages. A new addition is a teppanyaki griddle.

Here are a few healthy grilling tips from The Peninsula Manila to remember:

• Choose foods that are low in fat, high in nutrients and full of flavor.

• Use marinades not only to add extra flavor but also to reduce the formation of cancer-causing substances on foods.

• A marinade containing olive oil and/or citrus juices can reduce the formation of cancer-causing chemicals by as much as 99 percent. Marinades tenderize meats and make a much better meal.

• Grilling is a great way to reduce fat, but takes it even farther. If you buy lean cuts, use light marinades and serve grilled foods with a good helping of fruits and vegetables, then you will really be grilling healthy.
