CCCI to conduct Hazard Analysis and Critical Control Point Training

The Cebu Chamber of Commerce and Industry (CCCI) is set to facilitate an insightful Hazard Analysis Critical Points (HACCP) Training on August 30-31, 2023 at Cebu Chamber Centre, NRA, Cebu City. The training aims to introduce participating companies to the fundamental concepts of HACCP, enabling them to enhance their business operations through informed practices.

The upcoming comprehensive training will delve into various crucial aspects of HACCP, providing participants with a well-rounded understanding of its principles. The training program will encompass diverse topics, including the scope and purpose of HACCP, product description specifics, and the vital process of identifying the intended use of the product.

In addition to these core topics, the training will also guide participants through the intricacies of creating an effective flow diagram related to actual production, conducting hazard analysis, and pinpointing critical control points (CCPs). Moreover, participants will learn about setting critical limits that ensure the safety and quality of products.

Expanding beyond the basics, the training will also delve into critical control point monitoring, corrective actions, and the verification and record-keeping procedures necessary to maintain stringent safety standards.

The training's focal expert is Mr. James Bondal, a distinguished member of the Cebu Food Consultancy Group. With an extensive background in various facets of food technology, quality management systems, risk management, and sensory evaluation, Mr. Bondal is a qualified trainer in HACCP, GMP, product traceability, and product packaging, among others.
