The phrase refers to the province’s legendary machismo, but then also to the legendary Batangas coffee. The first coffee trees were planted in a barrio in Lipa in the mid 1700s. Barako, strong and dark, is the most enduring coffee variety grown in the country. It was for a while threatened with extinction until the crusading Figaro Foundation was formed, with the aim of saving the trees, the number of which had significantly dwindled.
