IN MY BASKET - Lydia D. Castillo - The Philippine Star

Let’s look at this period as a time to eat light, avoiding heavy meat dishes.

We are nearing the season of Lent. This means meatless meals every Friday. With regard to food, let’s look at this period as a time to eat light, avoiding heavy meat dishes.

We have fresh seafood in wet markets and other selling areas. Explore their selections and you will not be disappointed.

The markets abound with fish and crustaceans. It will not be difficult to plan delicious and yes, healthy meals. Here is a crab recipe which can be served as a special Sunday dish.

Binayabasang alimasag crab in guava puree

Ingredients:

Two crabs, each cut into half

Two cloves garlic, crushed

One onion, sliced

One medium size tomato, sliced

10 ripe guavas, peeled, then chopped or pureed

50 gms string beans (cut into 2-inch lengths)

1 cup pure coconut milk

4 tbsp brown sugar

3 tsps salt

Procedure:

Sauté garlic, onion and tomato in oil.

Add guava puree and crabs.

When crabs change color, add string beans.

Pour in coconut milk, add sugar and salt. Mix well.

Cook for a few minutes or until oil from coconut milk comes out.

Let boil and cook for a few minutes more.

Have delicious meatless Sunday meals.
