A night to wine and dine

Mandarin Oriental Manila’s The Tivoli brings Nights of Wine and Fine Dining this Friday, Sept. 26, from 6:30 p.m. to 10:30 p.m. Held every last Friday of the month, this gourmet wine-dinner event presents seven courses that are paired with unlimited pouring of the evening’s four featured wines.

The Nights of Wine and Fine Dining’s theme for September centers on Bordeaux. Held in cooperation with Wine Depot, the dinner features prestigious wines from the southwest France region. The Tivoli’s guest chef Paul Quarchioni’s masterful creations matched with the Bordeaux wines promise to be one of the most inspired pairings ever designed in the monthly gastronomic series.

Wine connoisseurs will delight in the selections: Duval-Leroy, Fleur de Champagne to pair with Arcachon Oysters set in Red Wine Shallots; 2007 Sainte Marie, AOC Entre- Deux-Mers matched with Salad Landaise, consisting of Tender Salad Leaves with Duck Ham, Foie gras, Duck Gésier and Lardoons; and 2006 Terra Burdigala, Stéphane Derenoncourt & François Thienpont paired with Poached Black Cod on Salmis Sauce. A refreshing Le Grisou (Chilled Red Wine and Crème de Framboise Cocktail) precedes the Charcoal-grilled Beef Tenderloin with Shallot and Red Wine Sauce and Potato Gratin with Truffles, which is paired with 2004 Chateau Puyguerand, Cotes de Francs. Tomme de Belloc (Dense cheese with a caramelized sugar lingering flavor) follows, before the dinner would be capped off with Prune and Armagnac Phyllo Tart with Armagnac Ice Cream and Espresso Coffee with Brandy Cream.

The 38-year-old Quarchioni brings with him impressive experiences with eight Michelin-star red restaurants throughout France, England and Thailand (as chef de cuisine at The Oriental, Bangkok’s Le Normandie).

Next month’s Nights of Wines and Fine Dining event is on Oct. 31.

Paul Potts shares the stage with Rachelle Gerodias

Paul Potts, winner of the 2007 Britain’s Got Talent search, will perform in Manila on Oct. 8 at the PICC. He will share the stage with Filipino soprano Rachelle Gerodias who played the role of Liu in the Vienna and Singapore productions of the Puccini opera, Turandot.

Barely two months after winning the talent search, Paul Potts’ debut recording, One Chance was released and a week later claimed the number one spot in the UK Album Chart. Last year, Prime Minister Gordon Brown presented Potts with a discography plaque for having sold 2,000,000 copies of his first album and for showing that “Britain really does have huge amounts of talent.”

After his audition in Britain’s Got Talent, unexpected Potts mania hit the online community all over the globe, with the video of his audition receiving close to 30 million hits on YouTube. He instantly became an icon of inspiration, moving humanity to tears with his unmistakable gift of music. He eventually won the competition. “It’s slowly starting to sink in now and, although I’m exhausted, I’m loving it!” says Potts.

Potts’ Oct. 8 repertoire will include songs from his One Chance CD such as Nessun Dorma, You Raise Me Up (Por Ti Sere), Time to Say Goodbye (Con Te Partiro), Amapola and My Way (A Mi Manera).

Paul Potts Live in PICC is presented by McDonalds, co-presented by 2nd Avenue and is a Concertus Production.
