Hokkein mastery at Shang Palace

Shang Palace at Makati Shangri-la has collaborated with Beng Hiang, a beloved Singaporean restaurant known for Hokkein cuisine.
It had been serving traditional Hokkien food in the heartlands of Jurong East and is well-loved among diners in Singapore. Authentic Asian flavours of the Far East have been served since 1978 and made Beng Hinag one of the best Chinese restaurants in Singapore. It prides itself in using only the best and freshest ingredients in their traditional recipes that have been preserved for over 40 years. Its signature dishes include the famous “black” Hokkien Mee and crispy Oyster Omelette, pleasing the palates of all diners, especially to those searching for a taste of the golden days-gone-by.
Beng Hiang in Singapore just closed because it is moving to another location so this pop-up was timely as Beng Hiang head chef Peng Chiew Tang is cooking here in Manila! He flies back to Singapore to welcome the Chinese Lunar New Year at Shangri-la Hotel Singapore with a feast by Beng Hiang on Feb. 16.
I grew up eating some of these dishes and frankly, it is pretty difficult to get that taste I am looking for — the way my grandmother cooked it for the family. I was happy to find some of these dishes with this Shang Palace collaboration.
Some dishes served at Shang Palace include the Cold Dish Combination, which is a selection of appetizers, Fish Maw Thick Soup with Crab Meat (one of my favorites), Deep Fried Sea Grouper in Sweet and Sour Sauce, Braised Duck with Sea Cucumber, Fried Oyster with Crispy Egg (another dish I enjoyed), Steamed Bun with Braised Pork Belly” Kong ba bao”, the Hokkien classic Crispy Roasted Chicken, Traditional Whole White Cabbage, Beng Hiang’s Hokkien Noodles, and for dessert — Peanut Soup with Dough Fritters. These are the dishes that I tried and there are so many more I want to try from the very extensive menu!

Upcoming musicals in Manila
Following several acclaimed and sold-out runs in London and an extensive tour of North America, the UK, and Australia, the Olivier Award-winning reimagined production of Tim Rice and Andrew Lloyd Webber’s musical Jesus Christ Superstar will be staged in Manila at The Theatre at Solaire from May 2 to 24. This production was re-imagined by London’s Regent’s Park Open Air Theatre, where it originated and is directed by Timothy Sheader and choreographed by Drew McOnie.
Jesus Christ Superstar is a timeless work that explores the biblical portrayal of the extraordinary events that led to the death and resurrection of Jesus Christ as seen through the eyes of his betrayer, Judas Iscariot. The story, told entirely through song, explores the personal relationships among Jesus, Judas, Mary Magdalene, Jesus’ disciples, his followers, and the Roman Empire. It opened on Broadway in 1971 at the Mark Hellinger Theatre. The original London production opened at the Palace Theatre in August 1972 and ran for over eight years. By the time it closed, after 3,358 performances, it had at that time become the longest-running musical in West End history.

This production won the 2017 Olivier Award for Best Musical Revival and the 2016 Evening Standard Award for Best Musical. It played a West End engagement at the Barbican in 2019 before returning to Regent’s Park Open Air Theatre in concert version during the summer of 2020, followed by a universally acclaimed UK tour in 2023/2024.
