Recipe: Chefs Tatung Sarthou, Jackie Ang Po's Bibingka Cheesecake

Creamy Bibingka Cheesecake

MANILA, Philippines — Celebrity chef Myke “Tatung” Sarthou celebrated his birthday with a special meet-and-greet event at the Quantum Sky View of Gateway Mall 2, Araneta City, Quezon City.

Aptly called "Cook with Chef Tatung," the event saw a follower of Chef Tatung’s Simpol YouTube channel, Menchie Porcincula, cook creamy spaghetti with him.

While the event saw food tastings, snippets of cooking tips and hacks, and giveaways courtesy of Chef Tatung’s sponsors and brand partners, one of the highlights of the event was the tandem cooking demo by Chef Tatung and his good friend and fellow celebrity chef, Jackie Ang Po.

So, what did the two celebrity chefs cook together? “Bake together” is the more proper term for it, as they whipped up a delicious Creamy Bibingka Cheesecake.

Creamy Bibingka Cheesecake

Ingredients:

For the crust:

1 tsp. butter, for greasing

12 pcs. Graham crackers, crushed

2 tbsps. sugar

6 tbsps. butter

For the filling:

2 bars cream cheese, softened

1 cup sugar

1 packet Nestlé All Purpose Cream

1/2 cup coconut cream

2 eggs

1 tsp. vanilla extract

1/2 tsp. salt

For the toppings:

4 salted duck eggs, sliced into thin wedges

Procedure:

1. Preheat oven to 350°F. Grease the 8-inch spring form pan with 1 tsp. butter. Wrap the outside of the pan with foil. Boil water in a kettle to be used in hot water bath while baking.

2. For the crust, mix together crushed Graham crackers, sugar and 6 tbsps. melted butter. Press evenly onto the bottom of the spring form pan and bake for 10 minutes in preheated oven. Remove from the oven and set aside.

3. Prepare the filling. Whisk cream cheese and sugar together until smooth. Add Nestlé All Purpose Cream, coconut cream, and eggs one at a time. Add vanilla extract and salt. Continue to whisk until smooth.

4. Pour filling onto prepared crust. Top with slices of salted duck egg. Place cake pan in a roasting pan and pour hot water from the kettle up to halfway up the cake pan. Bake in preheated oven for 1 hour or until a toothpick inserted in the middle of the cheesecake comes out clean.

5. Remove from oven and set aside to cool completely.

6. Refrigerate overnight.

7. Remove cheesecake from pan. Serve well-chilled.
