Recipe: Cheesy fruit cocktail ice drop

MANILA, Philippines — In a predominantly sweet and creamy treat or dessert, the contrasting saltiness of grated cheese always makes a big difference.

This is also true when it comes to the Quesorbetes Fruit Salad ice drop created by Chef Jackie Ang Po for Nestle Cream. Yes, it takes on the form of an ice drop, but you can keep it loose and “scoop-able” just like your regular fruit salad.

Quesorbetes Fruit Salad

INGREDIENTS:

3/4 cup sugar

1/2 bar cheese, grated

1 1/2 cups coconut milk

1 cup water

1/4 cup cornstarch

Pinch of yellow color

2 packs Nestle All Purpose Cream

2 cups fruit cocktail, chopped

1/2 bar cheese, cubed

1 cup fruit cocktail, chopped

PROCEDURE:

1. Mix together and cook sugar, grated cheese, coconut milk, water, cornstarch and yellow food coloring. Set aside to allow it to cool down to room temperature.

2. Whip Nestle All-Purpose Cream until it doubles, then fold into the base.

3. Fold in 2 cups fruit cocktail and cheese cubes. Freeze until ready to eat.

4. You can also make single serves by scooping salad into plastic cups. Put a wooden stick in place and freeze.
