The ramen craze now at SM Aura Premier

MANILA, Philippines - Ikkoryu Fukuoka Ramen at SM Aura Premier has been packing foodies in since it opened a few months back at this upscale lifestyle destination. It is part of Yamagoya Ramen and YS Food Co. Ltd., a publicly listed corporation in Japan. The SM Aura outlet is the second in the country.

There are four components in each bowl of ramen: the rich and creamy tonkotsu soup, a pork-based broth boiled for hours with the restaurant’s secret sauce; the chasu, juicy and tender thinly sliced roast pork; fresh-made premium noodles with imported Japanese flour; and soy sauce.

The recipes at Ikkoryu Fukuoka Ramen showcase the best in tonsuku ramen. Bestsellers include original tonkotsu, a ramen soup garnished with chasu, green onions, bamboo shoots, wood ear and dried seaweed as well as black garlic tonkotsu, which is garnished with many of the original ingredients, as well as a special roast garlic oil.

Diners can also add garnishes like ajitama (hardboiled egg), chasu (pork), takana kimchi, kikurage (wood ear mushroom), moyashi (bean sprouts), menma (bamboo shoots), nori (dried seaweed), and ninniku (grated garlic).

Ikkoryu Fukuoka also serves appetizers like edamame, gyoza dumplings; harumaki spring rolls, takowasa (raw octopus with wasabi paste), gyozano kawano cream cheese ae (cream cheese with bonito); hiyayakko (cold silken tofu cube), cheese mori (three kinds of cheeses), and ikano shiokara (sliced squid marinated with salty paste). There are also stir-fried and deep-fried dishes like yasai itame, asari butter (stir-fried clams with butter), daigaku imo (Japanese fried sweet potatoes with sweet shoyu sauce), Ikkoryu Stick pork cutlet, karaage, and chicken teriyaki wings.
