Chef Mitchie Sison shares culinary tips at Chef's Classics cooking demo

MANILA, Philippines - There is a way to make stainless steel pans non-stick like its Teflon-coated contemporaries. The secret is to season it well before use. This is one of the food preparation tips that celebrity chef Mitchie Sison of Unang Hirit shared during the Chef’s Classic by Sunnex Products Limited Hong Kong cooking demo at SM Makati. 

“To season the pan, pour about an inch of cooking oil and let it sit on low heat for about an hour or two,” chef Mitchie advised. Metal pans have uneven surface that’s why food stick on it while frying. The oil coats the surface and act as sealant to the gaps, creating an even, non-stick layer. Afterwards, just wipe off with a clean tissue or swiftly let water with soap run over it. Do not scrub it clean with an abrasive pad.

Chef Mitchie also revealed how to tell whether an egg is new or already old even before cracking it. “When you dip the egg in a bowl of water and bubbles appear, it’s a sign that it’s an old stock,” she disclosed. Bubbles indicate that a lot of air has already seeped in through the eggs. 

The poached egg with mushroom recipe was a cinch to cook. But some cooking enthusiasts find it a challenge to execute the perfectly poached egg where a firm, solid egg white encases a gooey yolk within. Chef Mitchie says that it is good to add a splash of vinegar to the boiling water to help bind the egg white. Carefully slip the cracked eggs (or crack directly) into the bubbling water then turn down the heat. Retrieve the eggs with a slotted spatula.
