MANILA, Philippines - Manila Hotel shares a special recipe that is simple and easy to prepare. Chef Josephine Yu-Candelaria, executive Chinese sous chef of Manila Hotel’s Mabuhay Palace, shares her expertise on how to make a delicious soya chicken.
Chef Joie’s Soya Chicken
Ingredients:
Chicken
3 cups water
3/4 cup dark soy sauce or dark mushroom soy sauce
1/2 teaspoon five-spice powder
1 teaspoon finely chopped ginger
1/2 teaspoon finely chopped garlic
1 stalk leeks
2 tablespoons white sugar
3 tablespoons rice wine
1 whole chicken
Ginger-Garlic Sauce
1 tablespoon chopped ginger
1 tablespoon chopped garlic
1 tablespoon leeks (white part)
A pinch of salt
3 tablespoons sesame oil
4 tablespoons canola oil or peanut oil
Soy Chicken Rice
1 cup jasmine rice
2 tablespoons oil
1 cup chicken stock
1 cup water
Preparation
1. For the chicken: In a pot, put all ingredients except the chicken. Boil for 20 minutes then add the chicken.
2. Steep the chicken for 30 minutes, turn off the heat and let the chicken stay for 10 minutes more.
3. Drain the chicken and let it air dry.
4. For the ginger-garlic sauce: In a bowl, put together everything except for the peanut oil, set aside.
5. In a small pan, boil the peanut oil and pour into the bowl containing the ginger mixture.
6. For the soy chicken rice: Sauté rice in oil.
7. Add liquids and cook until rice is done.
Using a brush, coat the chicken with sesame oil and cut into portions. Serve with blanched pechay, ginger-garlic sauce, fine chili sauce, and soy chicken rice.
