MANILA, Philippines - The Center for Culinary Arts (CCA, Manila) recently sent their top chef-instructors to attend the Foodservice Educators Network International’s (FENI) 12th Annual Educator’s Summit in Chicago, Illinois.
CCA, Manila was represented by chefs Melissa Sison, academic programs manager; Carol Lavin, baking and pastry coordinator and Gigi Angkaw, continuing education program’s manager. CCA was the only culinary school in the country present at the event.
“We attended this prestigious event since we want to promote quality education in our classrooms. We learned from fellow educators and shared our knowledge on how to become the best culinary educators,” said chef Melissa Sison.
One of the highlights of the summit was the 30-plus topics for the interactive master classes, which the CCA chefs attended. The classes were conceptualized and organized along with noted FENI partners, Kendall College, the French Pastry School, The Cooking and Hospitality Institute of Chicago, Washburne Culinary Institute, Lexington College, and Illinois Institute of Art-Chicago.
“Desserts and pastry lessons were also a big part of the summit with various classes covering classic and new techniques in preparing one’s favorite sweet treat.” added chef Melissa. “We also attended lectures on ways to improve classroom lectures in culinary schools such as ‘speaking across the classroom.’ We also learned new techniques on how to foster communication in the classroom, how to prepare students for culinary competition, and trends in research and development.”
