MANILA, Philippines - You don’t have to travel to Portugal or even to Africa to know how peri-peri chicken tastes like. Because now, there’s Peri-Peri Grill House at the Promenade in Greenhills, San Juan.
Peri-Peri Grill House uses an old-style Portuguese recipe that captures the full flavor of the peri-peri marinade. Yes, they use only imported African bird’s eye chili in making the marinade. Each whole chicken is butterflied so that it lies flat on the grill for even cooking. It is then marinated before it is cooked in a rotisserie grill to allow the special mixture of chili and spices in the peri-peri marinade to infuse fully into the chicken.
