Chicken treats at San Mig Cafe

San Mig Café, San Miguel Pure Foods Company Inc.’s only full-service restaurant, offers chicken dishes as part of its Chef’s Daily Specials.

Prepared by chef Peach Tan of San Miguel Purefoods Culinary Center, the dishes are all made with the freshest, choicest cuts of Magnolia Fresh Chicken.

Start with baked orange chicken salad, a zesty sweet French salad with baked orange slices and chicken on a bed of arugula, and mesclun drizzled with warm, and tangy orange butter sauce.

Monday’s special is sliced Hainanese Magnolia Fresh chicken, a leg quarter cut on top of a steaming bed of Singaporean rice. Served with lightly salted ginger and leek oil on the side.

Tuesdays are adobo days, with the chef’s own rendition of inihaw na adobo — a leg quarter cut slowly simmered in a marinade of Ilocos garlic vinegar and patis then grilled to perfection. Served with garlic rice and eggplant ensalada on the side.

Feast on chicken galantine on Wednesdays. The chicken breast fillet roulade is filled with ground meat, veggies, mixed herbs, and spices drizzled with pan gravy sauce, served with steamed rice and buttered vegetables.

On Thursday, chew on stuffed paella chicken or chicken breast fillet pocket-filled with the chef’s special version of all-meat paella. The chicken is lightly drizzled with turmeric-paprika bilbao infused oil and served with roasted asparagus.

Fridays are all about pasta, and San Mig Café’s chicken Florentine Pasta will not disappoint. Made with Magnolia Fresh Chicken breast stuffed with spinach, it is placed on top of a generous serving of spinach fettuccine laced with creamy mornay sauce and sprinkled with roasted sunflower kernels.
