Mandaue to bid for biggest "bibingka"

CEBU, Philippines - Mandaue City is eyeing to break the world record set by South Korea for the world's biggest rice cake, or "bibingkahan," in the Guinness World of Record.

Editha Cortes, an official of Taga Mandaue Inc., said Guinness World of Records representatives will be in the city to witness the event that will be held on May 8 when the city marks its fiesta.

Cortes said her group will be coordinating with the Mayol family who is known to be the oldest "bibingka" makers in the city.

Thirty stalls will be offering rice cakes on the feast of Saint Joseph the Worker.

The "bibingka's" ingredients include coconut milk and ground rice.The mixture is then cooked over charcoal.

Cortes said organizers will seek financial help from the city government for the world record bid. (FREEMAN)
