What to do with Avocado?

CEBU, Philippines — As summer fast approaches, avocados are beginning to appear

at markets and plentiful quantity. Surely, it’s going to come in truckloads

in the next couple of weeks. This seasonal green fruit is a big favorite of many  – only that high into its season one’s taste buds can grow fatigued of it.

In the Philippine countryside, avocado trees are quite a common sight. Nearly every home would have one tree in the yard. During avocado season, whole neighborhoods get inundated with avocados!

So what to do with such volume of avocados? A lot. Avocado can be made into soup and as ingredients in a good number of dishes.

For summer, though, avocado can be made into a perfect cooler. Avocado smoothie or avocado ice candy, for example.

Okay, since summer is a time when the family gathers – the kids being off from school – what about making a delicious snack or dessert out of avocado as well? A good one to make is Avocado Graham Float, a no-bake refrigerator cake dessert. It’s an ideal dessert for kids, since avocado contains healthy fats and other nutrients that are very good for the body.

Avocado Graham Float

Ingredients:

3 or 4 pcs. large ripe avocado, pureed in blender

200g crushed graham crackers (or any biscuit)

1 pack all-purpose cream

1 big can condensed milk

1 cup crushed grahams (or any biscuit)

Procedure:

• In a bowl, combine cream, condensed milk, avocado puree and mix well.

• Prepare rectangular tubs or any container.

• Line the bottom of each tub with crushed graham about 1½ inch thick.

• Pour in about an inch thick avocado mixture. Sprinkle it with crushed graham on top for the final layer.

• Refrigerate for to four hours or overnight. 

Serve cold. Enjoy!
