Homemade liver spread
CEBU, Philippines – It's often been said by experts that the best food is one that's made at home. True, homemade dishes may not always compare in taste with those made by professional chefs in posh restaurants. Yet the fact alone that by cooking at home one knows exactly what goes into his food makes home-cooked stuff the best option.
There are a lot of foodstuffs that can be easily made at home. Even items that are easily and affordably available at supermarkets can be as easily and as inexpensively made at home. The only difference is that at home people tend to be more meticulous with the quality of ingredients. And the finished food is free from chemical preservatives, as it is often to be consumed right away or within a short period of time.
Liver spread, for example, is something that can be made at home. The homemade version generally tastes better than the kind sold at supermarkets. Also called pâté, it is a good alternative dish for chicken livers, aside from the usual adobo style. Chicken livers are inexpensive and the process of making these into liver spread is simple.
Ingredients:
• 1/2 kg Chicken Liver
• 1/4cup Butter or Margarine
• 1Onion, chopped
• 1/2 teaspoon Salt
• 1/4 teaspoon Pepper Powder
• 1hard-boiled Egg (optional)
Procedure:
1. Melt butter in deep pan over medium heat.
2. Add cleaned chicken livers and sauté for about 6 to 8 minutes or until tender. Cut livers into quarters and cool.
3. Save pan drippings.
4. In a blender or food processor, combine liver pieces with the reserved pan drippings, onion, salt and pepper.
5. Blend well for about 20 seconds. For a richer pâté, blend in the (optional) hard-boiled egg.
This recipe yields about 1 ½ cups of chicken liver spread.
Liver spread is quite versatile. It makes for a very good sandwich, and as biscuit topping, and to make creamier chicken adobo. It can be conveniently tucked away in the fridge while waiting for other delectable ideas to use it for. (FREEMAN)
