CEBU, Philippines - Whenever Eya & Steve Shrimski would issue an invitation for food tasting of a new menu, I always take time to be there because they never disappoint their foodie regulars.

So it was that I managed to take a hearty bite through all the healthy but delicious concoctions, even if I had to run soon after for another commitment: Ingrid Sala-Santamaria’s concert at the Pedro Calungsod Chapel.

Hereunder are my  gustatory takes on the interesting fusion menu:

Tomato & Basil Cream Soup with Shredded Chicken & Garlic Bread Croutons. I loved the smoky flavor of this filling soup.

Carpaccio of Mango Cured Snapper with Banyuls Dressing, Green Salad & Young Sprouts. The generous slice of snapper was so fresh I forgot it was uncooked fish! It smelled of the mango marinade and the crunch of the bean sprouts was lovely.

Silken Tofu, Edamame Soy Bean & Peanut Dip with Vegetable Sticks & Croutons. The edamame earthy flavor blended well with the tofu – so light and healthy!

Laing & Native Goat Cheese Lasagna with Focaccia. This was everyone’s favorite! Who would think that the common gabi leaf can become so chic and world-class , merged with lasagna and focacia.

Grilled Ham & Herb Omelet Wrap with Cheese. What can one say of a healthy ham and cheese wrap? Comfort to the heart and tummy!

Square Flatbread Pizza with Roast Vegetables, Spinach, Ham, Chorizo & Mushroom. A pizza is a pizza is a pizza (Oops! Should I say this?) but this version of mixed roasted veggies and little slices of meat takes the prize for a surprisingly delicious healthy meal.

Spice Rubbed Pork Skewers wikth Mediterranean Garlic Sauce. The garlic sauce makes this well-marinated bbq pork interesting.

Char-grilled Snapper Fillet with Chili Jam & Vegetable Cous Cous.  The chili jam has a bit of a bite that is countered by the sweetness and the crunch of the cous cous.

At the gallery, mother Elaine Cooper and daughter Elise Cooper Lim team up to feature very different form of artwork on the wall, nevertheless distinct very creative and interesting.
