A whiff of Indonesia in Waterfront Mactan

CEBU, Philippines - Waterfront Mactan's executive chef is Indonesian-born Uyung Al Wazir. He specializes and brings with him the flavors of neighboring Indonesia through herbs and spices like chili, ginger, garlic, galangal, turmeric, lemon grass and lime. These spices definitely enhance the food selections at Waterfront Airport Hotel and Casino (WAHC).

Chef Uyung comes from Padang, West Sumatra of Indonesia where his culinary journey started at the age of six from his mother who gave cooking lessons.

His first culinary job was at The Stage Bar and Restaurant in Jakarta, Indonesia. He then became country kitchen restaurant senior cook before moving to Mulia Hotel Senayan where he assisted the chef de partie in the banquet kitchen.

Intercon Plaza Hotel was his last job in Indonesia where he was first cook. He then headed to Bali, Indonesia as sous chef of Ku da Ta Restaurant.

He then left footprints in various hotels and restaurants in other parts of Southeast Asia before being employed at the Waterfront Airport Hotel and Casino as executive chef.

His 15 years of expertise in the kitchen goes beyond Indonesian cuisine. It reaches out to Japanese, Thai, Cambodian, as well as western food, particularly Italian and French.
